A quick and easy iron-rich recipe with 3 main ingredients – broccoli, spinach and beans. Some added cheese to make it wholesome and voila – yumminess in a bowl. Bon Appetite.
Ingredients
- 2 tbsp butter
- 3 cloves of garlic, finely chopped
- 1 large onion, finely chopped
- 4 cups of vegetable broth
- 1 can cannellini beans, rinsed and drained
- 700g of broccoli – finely chopped
- 1 tsp of fresh thyme – finely chopped
- 2 cups of spinach or kale
- 2 cups of cheese
- Salt and pepper to taste
- Parmesan, grated
Serve with garlic bread.
Optional: Pork belly medallions – cook per instructions.
Instructions
Heat the butter in a large pan over a medium-low heat. Add the onions and sauté for about 5 minutes or until golden. Add garlic and sauté for another minute.
Add cannellini beans, broccoli florets, thyme and vegetable stock. Boil for 5 minutes over high heat. Add the spinach and cook for 5 more minutes.
Remove from heat and pour mixture in blender and blend until smooth. Pour soup back into pot. Add cheese and simmer on low heat for 4 minutes.
Serve with garlic bread and if you’d like pork medallions.
